Caesar salad

Traditional Caesar salad

Adapted from Taste.com.au

2 egg yolks
2 tsp dijon or seeded mustard
4 anchovies
1 Tbs red or white wine vinegar
1/2 C canola oil

Place yolks, mustard, anchovies and vinegar in a food processor, and process until smooth. With the motor running on low, slowly add oil until dressing thickens. Season with salt (not much!) and pepper, then refrigerate until use. 

Large cos lettuce
Poached or fried egg
Veg bacon
Parmesan cheese
Croutons
